We are convinced that a cuisine tells the story of a territory, just as a landscape does. At Sayonara we bring the flavours of Primiero and Trentino to the table with respect and measure. Recipes rooted in alpine tradition, carefully chosen ingredients, preparations that follow the rhythm of the seasons.

Canederli that smell of warm broth, fresh pasta, meats that speak of pastures and mountain grazing, cheeses that tell of altitude. Honest dishes, recognisable, because tradition is always our starting point. To offer dishes that taste of family, but speak of today too.

Our menu

Every season brings new ingredients, new nuances, new balances. Our menu follows this natural movement, making the most of local produce and recipes that celebrate the mountain without forcing it. Every day we choose to tell something new: which is why you will not find a pre-packaged seasonal menu here. Because we like to be inspired by what our territory gives us that is good and fresh.

You come here to dine, of course. But also to linger a little.

In the dining room, wood and soft light accompany the experience. The warmth is the kind you find in a Stube. Outside, the Pale di San Martino are the silent guardians of the night. Inside, time slows between a glass of Trentino wine and a dessert that closes the evening with delicacy.
