A tasting experience that celebrates the territory with elegance and harmony. Chef Antinori follows the rhythm of the seasons and his ingredients, crafting tasting journeys and dishes that depart from Memory to tell new stories. Always in a whisper.
It is a story of passion and patience. A great deal of patience. Like that of his grandfather, who let the ragù simmer for hours, never in a hurry. It is an act of love toward the ingredient, in its naturalness, in its quietly explosive flavour, never excessive. Above all, it is a deliberate choice to let each ingredient take centre stage.
Chef Paolo Antinori is the delicacy of a guarantee, a whispered signature that makes room for the raw material.
His twenty years of experience in Italy and abroad are united by a love of refinement and for his land, Le Marche, which surfaces in every dish. Trained under Gualtiero Marchesi and Giorgio Nardelli, Chef Antinori reinterprets ingredients and, like a sculptor, shapes and moulds flavours that are balanced and never excessive.
